I tried that routine again but the fuselage side has no surface that will let you extrude.

I created a drawing at rear most point.

extruded the new piece and joined.

then when converting to sheet metal I get an error saying it can't be done, unable to determine thickness.

A couple of things: You will often have to make an offset surface of the part and then thicken. This is because the edges are not perpendicular to the face.

Secondly, make sure you have sheet metal definitions to match your intended material thickness, or just use a thickness that is already in your sheet metal rules.

well im not familiar with fusion360 yet i have always managed to flatten any fuselage side panel with a single curvature not a compound one in Catia . it has an unfold command there

Fusion has the same function in the sheet metal environment. It can be a bit touchy in making sure all the parameters are correct.
